1. What's your favourite of Sweat Shops 'home brews'?
Currently it’s our Brewer’s Choice which is a Stout. Having lived in the UK for almost 10 years I grew very fond of Guinness and this is a pretty damn good stout compared with some I’ve tasted around the world.

2. What do you look for in your staff?
Honesty, Loyalty & Hard Work

3. What is it about the hospo world that makes you tick?
I started as a Food Runner at Panda Catering when I was 15 years old, they were the original corporate caterer at Eden Park and were owned by the Ah Chee brothers and moved on from there. We all know that once you have Hospo in your blood you’re stuck with it. I love the fact that you go to work with essentially your second family every day

4. What's your favourite thing to do in Auckland on your day off?
When it happens just hang out with my wife & enjoy going out and experiencing the different venues around Auckland.

5. What's your go to drink when you’re on the other side of the bar? And who would you most like to share it with?
I like a good Bourbon or as I mature or get older I like Good Whiskey more and more. My wife & any old acquaintances from my many years in the industry. It’s really surprising where you run into them….
